Lolly’s Gluten Free Dark Chocolate Mix

Baking Instructions
- Preheat oven 350°F
- Grease 2 nine-inch baking pans with butter, then dust with flour (flour sachet)
- Put one stick (1/2 cup) of softened butter into a bowl. With a blender on medium-high, whip the butter. Add the two tablespoons of milk, a little at a time, continuing to blend until creamy for about 1 minute and 45 seconds.
- Put 1 ¼ cups of water in a small pan on low heat until little bubbles appear. Pour the cocoa flakes (sachet) into the water and mix thoroughly. Take off the heat.
- In a separate bowl, blend the cake mix with the chocolate water and mix on medium-low speed until well incorporated. (About 25 seconds)
- Add four (4) eggs and the vanilla sachet, and blend at medium-low for about 15 seconds
- Add whipped butter into the mix and blend on medium-high for about 45 seconds
- Use a spatula and fold the mix to ensure the batter is thoroughly blended - don’t overmix
- Pour mix into pans (about 3 cups per pan) and bake for 26-30 minutes
- Check doneness with a toothpick (included) after 26 minutes. Then, every minute thereafter, until the toothpick comes out clean.
