Damask’s proprietary gluten free mix is made from a blend of rice flour, whole grain brown rice flour, tapioca starch, and potato starch. After YEARS of testing, we can confidently say this is the best gluten free cake mix on the planet.

19 OZ package (1 lb 3 oz) 
Makes two 9" round cakes 

Baking Instructions

  1. Preheat oven 350°F
  2. Grease 2 nine-inch baking pans with butter, then dust with flour (flour sachet)
  3. Put one stick (1/2 cup) of softened butter into a bowl. With a blender on medium-high, whip the butter. Add the two tablespoons of milk, a little at a time, continuing to blend until creamy for about 1 minute and 45 seconds.
  4. Put 1 ¼ cups of water in a small pan on low heat until little bubbles appear. Pour the cocoa flakes (sachet) into the water and mix thoroughly. Take off the heat.
  5. In a separate bowl, blend the cake mix with the chocolate water and mix on medium-low speed until well incorporated. (About 25 seconds)
  6. Add four (4) eggs and the vanilla sachet, and blend at medium-low for about 15 seconds
  7. Add whipped butter into the mix and blend on medium-high for about 45 seconds
  8. Use a spatula and fold the mix to ensure the batter is thoroughly blended - don’t overmix
  9. Pour mix into pans (about 3 cups per pan) and bake for 26-30 minutes
  10. Check doneness with a toothpick (included) after 26 minutes. Then, every minute thereafter, until the toothpick comes out clean.
