Lolly’s Gluten Free Confetti Mix
Damask’s proprietary gluten free mix is made from a blend of rice flour, whole grain brown rice flour, tapioca starch, and potato starch. After YEARS of testing, we can confidently say this is the best gluten free cake mix on the planet.
You Will Need:
1 Stick (1/2 cup) of unsalted butter
5 Eggs
2 Tbsp of any milk of your choice

Baking Instructions
1. Preheat oven to 350°F
2. Grease 2 nine-inch baking pans with butter, then dust with flour (flour sachet #1)
3. Put sprinkles and flour (flour sachet #2) in a small bowl and mix together - set bowl aside
4. In a medium bowl, beat five egg whites on medium-high speed for about 5 minutes until they form stiff peaks. Set bowl aside
5. In another bowl whip 1 stick (1/2 cup) of softened butter. Add the two tablespoons of milk, a little at a time, continuing to blend until creamy for about 1 minute and 45 seconds
6. In a separate bowl, blend the cake mix, 1 cup of water, and the vanilla (sachet) on medium-low until incorporated (about 20 seconds)
7. Add the whipped butter to the cake mix on blend medium-high for about 30 seconds
8. Add the egg whites to the mix while continuing blend for another 30 seconds
9. Use a spatula add sprinkles slowly into batter and fold to ensure the batter is thoroughly blended - don’t overmix
10. Pour mix into pans (about 3 cups per pan) and bake for 21-28 minutes
11. Check doneness with a toothpick (included) after 21 minutes. Then, every-minute thereafter until the toothpick comes out clean
